Made these yesterday, thought I'd share.

 Whipped Shortbread Cookies

Ingredients

Yields 3 dozen cookies

1 cup softened butter (assume salted)
1 ½ cups AP flour
½ cup powdered sugar
¼ salt
½ tsp Vanilla extract
½ tsp Almond extract
½ cup glazed cherries (optional)

Directions

Preheat oven to 325dF
Combine flour, sugar, and butter
Whip with an electric mixer or stand mixer for approximately 10 minutes
Drop by teaspoon onto a cookie sheet
Press a glazed cherry into each cookie
Bake for 15-20 minutes until lightly browned

NOTES


Reddit sez to make sure you give it a full 10 minutes whip to get the correct melt-in-mouth texture.

Reddit also says you can use a walnut or press in a Hershey’s kiss at the end instead of the cherry.

Made this for the first time on Dec 31, 2020. They are *very* short, melt in the mouth. I added a half teaspoon of salt this batch, that’s too much along with salted butter. Not crazy too much, but too much. Used glazed cherries from the store. Very good. 18 minutes in the new Maytag oven. They need to be just barely brown on the edges, if they are overcooked they will be too short. They are not very sweet, they need the cherry or chocolate, or something else. Would make it again

I voted that I would not be making them ... then I visited the source post, saw the recipe image, re-read, and took in the part about whipping them for about 10 minutes ... and now I want to do this.

By chance, I bought a bag of pecans recently. Of course, on the other hand, a couple sticks of butter does not scream "eat better in the new year!" Not that I should eat all three dozen on my own ... though that is a likely outcome.

Wrap them in plastic wrap in groups of four and thaw one batch each weekend.
