Pour over 1 bottle or can of ginger beer. Works with ginger ale, but not as good. If you use ginger ale, add 1/4 tsp ground ginger in the sauce, below
Mix 1/4-1/3 C soy sauce with the mustard (one or two containers), 1 tsp garlic powder, 1 tsp onion powder (if you have it, or you can put in 1 onion chopped fine and 2 cloves fresh garlic). Add 1/4 tsp Chinese Five Spice (if you have it, or a pinch of cloves, coriander, and cumin; easy on the cloves because the flavor can take over). Pour mix into crock pot.
Cook on low 10-20 hours. I often start it the night before, and turn it off to cool an pull in the afternoon. Should pull apart with a fork.
Skim fat off the liquid. Boil down to at most half volume, or further. If too thin, thicken with about 1 tsp cornstarch mixed with 1 Tbs soy. Adjust seasoning to taste
Mix sauce with pulled pork.
Eat.
