Do the hotties always keep quiet about their non-single status until its too late and I've made the wrong call? i.e should have put the moves on their equally attractive friend...

No doubt there are sound evolutionary psychology based reasons for this, but how the fuck am I supposed to make an informed call unless I get a clue?

after reading your intro i was about to post an entirely different comment.
wherein i suggest you ask the ladies you are wooing within the first 15 minutes of conversation if they are seeing anyone.
i've been in a couple of bad situations with men who i thought found me fascinating, witty, intelligent, and were really into horticulture. they would later accuse me of leading them on, being a conniving bitch, and hiding my relationship status from them.
you see, after a couple of drinks i am confident that i am the cleverest most interesting gal in the world and that the guy sitting there asking me about my studies wants an intellectual discussion.
so add to your moves an early "are you seeing anyone"

Much more mundane. There were 2 girls, friends with each other. I was flirting with both of them. Only one of them was single and chose to hide the fact. Probably out of some female competitive streak that men can't understand. As a result two people who could have got laid, didn't.

Another way of looking at it - I backed the wrong horse...
