I love pancakes, but do not yet know whether I love them with pecans.

Your recipe is about double that for my normal pancake recipe (which is more than enough for one fat bo), so I suspect I would cut this by 50% as well. Looks tasty, though.

...but rather the recipe in your sig that are causing you problems. However, I would substitute some of the items in that recipe for healthier things, and add stuff like flax seed to your pancakes too.

brian style pancakes:

use whole wheat pancake mix. follow instructions as printed on box. use omega-3 egg for egg rather than regular egg. add 1/2 pound sliced strawberries and 1 cup blueberries to mixture before pouring on griddle. serve with sugar free syrup and no butter.

if desired, 1 scoop whey protein may be added to dry pancake mix.

I invented this recipe in desperation, during a period when my then-toddler son wouldn't eat anything except pancakes.

I am not kidding.

    * 2 cups Bisquik or other self-rising biscuit mix
    * 1 egg
    * 1 cup milk
    * 1/2 cup creamy peanut butter

    * I have a note saying you may need to add a second egg. I guess it depends on the size of your eggs...

Mix it up, and cook 'em up. With maple syrup you'd swear you were eating Tastykake Tandycakes for breakfast. (Philadelphia people will know what I mean).

Other inventions from this period of my life included whole wheat and apple pancakes, sour milk and corn meal pancakes (still a favorite) and chocolate chip pancakes.

until you've spread the batter on the griddle. It works better that way. Just laddle them out, then put the pecans on the cakes.
