I have been doing indian curries of various varieties for the last couple weeks. They reheat well. They're tasty. Some are even tastier the next day.

But you're right it's a pain to cook for just oen, unless you plan to have leftovers.

Ribs (and other cooked meats) freeze well once, after that the meat gets tough. Most veggie dishes don't freeze well at all.
