Cooking for one sucks though. Cooking for 4-10 is a breeze. I was just roped into cooking Xmas dinner in Belgium (should the country remain intact) for around 20 last night. I wonder what they'll do if I cook 'em Chinese.

Cooking for one is difficult. So many dishes are impossible to scale down, and don't freeze well.

I have been doing indian curries of various varieties for the last couple weeks. They reheat well. They're tasty. Some are even tastier the next day.

But you're right it's a pain to cook for just oen, unless you plan to have leftovers.

Ribs (and other cooked meats) freeze well once, after that the meat gets tough. Most veggie dishes don't freeze well at all.

Curry, one pot meals, thick soups, risotto, stir fry (actually works better for one), things involving escalopes of meat or grilled fish. About the only thing seriously excluded imo is full roasts.
